Red Currant Tomato & Strawberry Salad Towers

Our little gem, the red currant tomato is known to show in many recipe toppings because of it’s no prep, no fuss readiness ability. But sometimes this sweet little tomato deserves the full spotlight all to himself like in our Red Currant Tomato & Strawberry Salad Towers. Sweet tiny red tomatoes paired with strawberries, then tossed in tangy aged balsamic. I don’t have your attention yet? Well put it on a bed of fresh whipped basil goat cheese and I’m sure I do now.

And the fun part of this recipe is the presentation. After forming the tomato and strawberry mixture, pack it into a small glass dish and place it on the bed of basil goat cheese. Serve with the glass still on it allowing your guests to do the honor of releasing their salad or do it yourself ahead of time. It always feels exciting to see how well you can get your salad to stay close to it bowl shape. Don’t worry if it falls slightly it only adds to its presentation, like snowflakes everyone will be slightly different.

Air Fryer Eggplant Stacks With Creamy Basil Dressing



RECIPE:


RED CURRANT & STRAWBERRY SALAD TOWERS


Makes: 4

Prep Time:10 Minutes  


INGREDIENTS:

1 cup red currant tomatoes 

1 cup finely diced strawberries 

1 teaspoon olive oil 

2 teaspoons aged balsamic vinegar  

Freshly ground pepper 

4 oz plain goat cheese 

1 tablespoon freshly chopped basil 

4 whole fresh basil leaves



DIRECTIONS:

1. In a small mixing bowl combine goat cheese and the basil. Divide by 4, spread a small amount in the center of an appetizer plate creating a circle approx. 3" wide.


2. Mix tomatoes, strawberries, olive oil and balsamic together. Using a 3 oz glass bowl, fill bowl to top packing down as you fill it. Gently take one of your plates with the goat cheese circle on it and place the glass bowl onto it then quickly flipping it creating your stack.


3. Sprinkle with fresh ground black pepper.


4. Garnish with fresh basil leaf.
