Fresh cranberries and rosemary are infused together to create a holiday simple syrup that’s perfect for holiday drinks. With only four ingredients, this syrup only takes 20 minutes to make and is ready to serve in one of our favorite cocktails such as a Cranberry Old Fashioned or a Holiday Cranberry Martini. It's also a great way to add extra flavor by drizzling over a good vanilla cupcake.
It's hard to believe that Christmas is only days away. With a major Nor'easter on its way, this evening there's sure to be a batch of this recipe brewing on the stovetop for a little evening relaxing by the wood stove in the large 1700's fireplace in our newly remodeled library whiskey room. Remodeling the house was in full swing all summer and fall, but we decided to slow the pace down for Christmas to fully enjoy our new home and give me time to catch up on some long overdue blog articles and recipes.
So with the tree decorated, presents wrapped and a Christmas Eve dinner of oysters & truffle cheese planned, it is time to snuggle by the fire with a good cocktail and be thankful for everything that we have.
CRANBERRY SIMPLE SYRUP
Makes: 1/2 cup
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Cooling Time: 5 Minutes
Total Time: 25 Minutes
INGREDIENTS:
1 cup filtered water
6 oz fresh cranberries
2 sprigs of fresh rosemary
3/4 cup organic cane sugar
DIRECTIONS:
Place all ingredients into a saucepan and bring to a boil. Reduce heat and let simmer 10 minutes or until all cranberries have popped.
Remove from the burner and let the mixture cool slightly.
Strain through a fine-mesh strainer and let the mixture continue to cool. Keep aside all strained cranberries.
Pour simple syrup into a small lidded ball jar and refrigerate.
Put strained cranberries into a separate ball jar and refrigerate.
Notes: This cranberry simple syrup and strained cranberries can be stored up to 2 weeks in the refrigerator. Use the simple cranberry syrup and strained cranberries in our Holiday Cranberry Martini or Cranberry Old Fashioned.
