BLT Martini


Summer is officially coming to an end but the tomatoes in my garden haven been informed of this news yet. Our tomato plants are still producing away adding to piles of tomatoes in my kitchen being made into canning recipes. Todd and I have been creating salsa and sauces into canning masterpieces. There’s something very exciting about seeing your food safely sealed into jars with the thoughts of popping them open in a few months during a cold and snowy day.


I do still, however, try to incorporate fresh tomatoes into every nightly dinner recipe because even though a jarred tomato is enjoyable there’s nothing like tomatoes fresh during the summer. But how many different ways can one come up with before you start to feel like you are putting the same meal on your dinner table weekly?

We are very intentional with what recipes we choose to develop just like the intention that we have in everyday living. When I take the time to slow down and truly enjoy the recipe development and cooking it’s almost a form of meditation. Recipes become more playful, creative, and almost in a way spiritual. A part of you goes into the recipe with the energy you put into it. The same is true too when you serve the food to friends, family, or guests. You are actually sharing a part of yourself.

This recipe is all about the dinner cocktail and not the actual dinner. But who am I to judge you if you decide that this BLT Martini counts as a meal for you. It has all of the elements of a BLT with crisp bacon, fresh lettuce, and perfectly ripened tomatoes. I recommend using these perfectly sized red currant tomatoes for this recipe. They are the perfect size for muddling and drink skewers.

Start by soaking these little tomatoes in your vodka of choice. They are best soaked overnight in a Ball Jar and will last up to two weeks in your refrigerator. Then head to your garden for some greens. Microgreens work great because of their size and uniqueness but even a small piece of romaine lettuce will work nicely as well. I chose thin cut bacon for the thickness pairs well with the size of the red currant tomatoes.

To sweeten up the tartness of the tomatoes I used Delallo Apple Cider Vinegar Glaze. It can be found in the vinegar section of your grocery store. If your store doesn’t carry it you can simply order it online or substitute it for a white balsamic glaze.

Always serve in a freezer chilled martini glass as it helps keep your martinis that you are serving to your guests cold and crisp.

RECIPE:


BLT MARTINI

Serving Size: 1


INGREDIENTS:

3 tablespoons red currant tomatoes

Small piece of lettuce or microgreens

Small 2” piece of bacon, fried

4 oz Vodka

1/2 juice of a freshly squeezed lemon

2 tablespoons apple cider vinegar glaze


ITEMS NEEDED :

Cocktail shaker & strainer

Muddler

Cocktail skewer

Martini glass



DIRECTIONS:

Prep your cocktail skewer as follows:

1. Take a few of the red currant tomatoes aside and put them into a small bowl. Cover with vodka and let soak. This can be done up to a few hours to a few days in advance.


2. Once ready to serve place a small piece of lettuce or microgreen onto a cocktail skewer. Follow by adding a piece of cooked bacon, then the vodka-soaked red currant tomatoes.

Make the cocktail as follows:


1. In a shaker place remaining red currant tomatoes. Using your muddler, muddle the tomatoes until mostly broken down.

2. Fill the shaker halfway with ice, vodka, lemon juice, and apple cider vinegar glaze.


3. Shake until completely mixed and strain into a chilled martini glass.

4. Add skewer and enjoy it!
